Grandparents Day: You are so 'Berry' Special!


 
With Grandparents Day being tomorrow I thought I would put together a sweet treat that my kids could give to their wonderful grandparents!


 
 
 
This delicious Berry Streusel Cobbler immediately came to mind because it is easy and so very yummy!! This is an quick gift that you can easily put together before tomorrow comes so let's get started shall we!?!
 
 
Berry Streusel Cobbler
(recipe adapted from Eagle Brand)
1 pint fresh or frozen berries of your choice
1 (14-oz.) can sweetened condensed milk
2 tsp. grated lemon peel
3/4 c. plus 2 tbls. cold butter or margarine
2 c. biscuit baking mix, divided
1/2 c. firmly packed brown sugar
1/2 c. chopped nuts
 
 Preheat oven to 325 degrees. In bowl, combine blueberries, sweetened condensed milk and lemon
peel. In large bowl, cut 3/4 c. butter into 1-1/2 c. biscuit mix until crumbly; add blueberry mixture. Spread in greased 9-inch square baking pan. In small bowl, combine remaining 1/2 c. biscuit mix and sugar; cut in remaining 2 tbls. butter until crumbly. Add nuts. Sprinkle over cobbler.
 Bake 1 hour and 10 minutes or until golden.
 
 
Berry Sauce:
In saucepan, combine 1/2 c. sugar, 1 tbls. cornstarch, 1/2 tsp. ground cinnamon and 1/4 tsp. ground nutmeg. Gradually add 1/2 c. water. Cook and stir until thickened. Stir in 1 pint berries; cook and stir until hot. Serve over cobbler.
 
 
I layered the cobbler and sauce in a pint-sized mason jars and used a white cupcake liner to put over the top. I used my Silhouette to create the tags and my Zyron machine to make them adhere to the jars. Lastly, I wrapped a piece of yarn around the jar with a mini wooden spoon. Reheat in microwave (with lid and ring off) for 25 seconds. Enjoy with a scoop of vanilla ice cream or some homemade whipped cream! Yum!
